Go for books of publications like Arihant, Cosmos Bookhive and RPS editorial board, they'll be providing both guide books and solved last year papers and about your confusion of going either to IIHM or IHM, I would suggest you to get admission in IHM because of the following reasons:
1. IHM is a government institute and IIHM is private.
2. Both provide same level of placements.
3. And since placements are kinda same why would you be paying more fees in IIHM as compared to IHM.

1. Bachelors Courses [Bachelor of Hotel Management BHM Bachelor of Catering Technology and Culinary Arts (BCT & CA Bachelor of Hotel Management and Catering Technology, B.Sc in Catering and Culinary Arts, BA in Culinary Arts, B.Sc. In Hotel Management and Catering Technology].
2. Diploma Courses (Diploma in Culinary Arts, Diploma in Catering Technology, Diploma in Food Production, Diploma in Food and Beverage Science, Diploma in Bakery and Confectionery, Certificate Courses).

Both options are available it's up to you which one to choose. Diploma in culinary is for 2 years or so depending on the institute whereas complete UG course is for 3 years.
