Yes, all these courses have good opportunities. All these are still niche sectors in India and in all these sectors you have opportunities to get into PSUs. Chemical will be easier among the 3 and opportunities in mining, power generation, research and development.

Actually, no, because there is a difference between normal engineering and an engineering through IIT. So, there will be difference in the quality of job also.

Both ECE and Aerospace are excellent choices to become a technologist. Aerospace is niche branch of engineering with comparetively lesser scope in comparison to ECE grads but it is an exciting branch. All major technology breakthrough first occurs in Aerospace then comes it's industrial utilisation. If you are aircraft or drone enthusiastic person then Aerospace is right branch of engineering for you or else you can opt for ECE.

As per your query, I would prefer either aeronautical or aerospace.
Aerospace engineering is concerned with designing and building aircraft and spacecraft. Aerospace engineering can be divided into two specializations: Aeronautical engineers handle design, manufacturing and maintenance of aircraft, helicopters & UAV etc. and astronautically engineers, who design spacecraft, rockets, satellites, and others. Aeronautical engineering was the original term for the field. Both, Aerospace Engineering and Aeronautical Engineers are niche branch of engineering with lot of similarities in syllabus with almost 90% overlap.
