Yes, you can. Diploma is considered equivalent to 12th and hence you can clear JEE Mains or other CETs and can seek admission in college of your choice provided of course you do well in exam.

Of course, you can choose any branch you like including Aeronautical Engineering. Amity has a very good name and their placement cell also is active.

One way is to appear for JEE Mains, score very good marks and seek admission in IISc, Bangalore. Another way us to score above cutoffs in JEE Mains, then appear for JEE Advanced and get admission in IIT.

As per my knowledge, presently in India, no Institute offers any course in weapons. There is of course regular course in Armed Forces but it's not open to civilians.

In India there are plenty of opportunities. IAF, Army & Navy, DRDO, HAL, BEML etc in Govt sector and TAAL, Reliance, L &T, etc. in private sectors are the major employers.

Aerospace studies in India are quite old. Now a days almost all reputed colleges offer this course at graduation level. One can do PG also in India.

It's good to see your dream of getting admission in IIT. Now work towards it. IIT-M is a premier institute and I feel you should be in 90 percentile bracket to get admission in course of your choice.

The best place to study Aeronautical Engineering is Indian Institute of Science, Bangalore. Here, placements and package both are reasonably good.
