Hello Surbhi,
After you complete class 12th. You have two routes to become a pilot:
Private flying school.
Cadet programs
Now, the difference between the above two options is:
If you get into a private flying school, it is much cheaper than the cadet programs. You do not have any competitive exams to get in. You get to complete the training at your pace. You will have to search for type rating centers. No jobs guaranteed. You might have to wait for a long time before you can fly for an airline.

It doesn't matter much what course you picked. IAF takes all forms of engineering students for various tasks. So, the best branch to choose would be the one you are interested in. You will be much better off with the branch you can easily study. Other than that, Aviation Engineering will be more appropriate given your query for obvious reasons. So choose what you think will be best for you.

You will have to appear for AFCAT exam which is conducted by Air Force for both Technical Entry and Flying Branch. After clearing AFCAT, you will have to go through AFSB before you get recommended by them for the position that you have applied for.
The AFCAT exam is a 200-mark exam and a merit is decided each time. Candidates who manage to clear that merit are called for AFSB at some designated Air Force stations. Allahabad, Varanasi, Mysore etc. are common stations for AFSB.
