Nobody can guarantee anything 100%. What is acceptable or should be available is a reasonable explanation. At present, passenger traffic, as well as cargo traffic, is increasing every year in India. As a result, almost all careers have announced plans of inducting aircraft. This will surely require a large number of AME with DGCA licence to service these aircraft.
So, I feel that there is a reasonable chance that you will get placed after successful completion of this course.

It's always good to keep on inventing ourselves. It's also indeed gratifying to know your desire to do BE. But the issue as I see is, can you survive three years without a job and in addition paying fee, etc., of the college? If you can sustain, then go for lateral admission for doing BE. However, if you cannot then go for AMIE. It's equivalent to BE for all practical purposes.

There are plenty of institutions in India that are offering courses in aircraft maintenance engineering. But, unfortunately, no unbiased organization has ranked these and hence it's not correct to put these in order of merit. I suggest you seek admission to the college nearest to you and check on its placements record. That's it.

Yes, there is absolutely no issues for girls working in the field of aircraft maintenance engineering. It definitely offers a better salary.

Aircraft Maintenance Engineer or "AME" are the people who maintain the aircraft by carrying out different maintenance activities on the aircraft and making sure that is safe for flying. There are basically two streams. One is mechanical and the other one is avionics. There are many training establishment in India that give this training. Here basic qualifications for entry is only 10+2 with PCM. Of course with more people desirous of joining these institutions, some of these have started taking entrance exam to admit students. You can become an AME by appearing for and clearing examination conducted by DGCA for granting a licence.

Eligibility for aircraft engineering is you have to complete 10+2 with PCM (Physics, Chemistry and Math) and appear for an entrance exam.
You can choose aerospace engineering course in a given college. You complete the course in 4 years and enter the job market.
To get entry-level jobs just BE degree is good enough, however, for higher job posts, you need Master's or a doctorate degree.
Here are eligibility criteria for three years AME course.
Must have passed 10+2 with 50% marks in aggregate in Physics, Chemistry and Maths.
Three-year Diploma in any branch of Engineering.
