The more important thing in B.Tech is branch , CSE is very good branch as he get. You just don't go for petroleum or chemical. Vit is also very good for computer Science student. Placement records are very good.

With such a good score, you should go with any good college. Most of the colleges provide scholarships based on the board percentage. I would suggest you to first think about a good private college instead of scholarship.

Yes, Amity-Noida is very good for B.Tech in CS. Apart from that, this university will play a crucial role in your overall development which would prove to be of great help afterwards as this university not only lay emphasis on academics but other things also. But please do not, I repeat never ruin your academics as it will create a huge problem for you during campus selection. You should decide for yourself. If you are confident that you can crack the JEE for CSE then you should drop a year, otherwise, don't waste your time. You can also lose what you have now. So, as per my opinion, don't drop and start studying now in IIIT. Placements totally depend on you. If you have good skills and knowledge then you will get placed easily either you are in IIT, NIT, IIIT or any other private college.
