You first need to apply along with academic documents and IELTS score. Interviews are very rarely conducted, only if the program that you are applying for is competitive.

With the profile that you have shared you can apply to mostly all the overseas destinations for studies, however depending on the country of your preference and the budget pertaining to that. In case, if there are some available scholarships, maybe you could apply for the same too.
