JEE is one of the toughest Exam in India for securing admission in IIT, NITs etc. If you want to start preparing for IIT from class 11, you initially have to grasp the basic concepts from one book. Moreover, you should focus on NCERT books of PCM as well as Exemplar. It will really help you alot. All the best for future endeavours.

Yes, you can if you are in class 11 you can request to your teacher to change your stream give her a application with reason, and they can make it happen. But if you want to change your stream in class 12 you can't do it you have to drop for that so make sure you do it in class 11 or before starting the registration of boards. As for school you can change it too but only in class 11th but in sine cases you can change it in class 12 too but can't change your stream.

I had similar kind of questions when I was in your class. Class 11th is way much important than we think, you'll need every sentence you've read in class 11th later
You should stick with NCERT books and keep solving exercise, intext and additional exercise questions too. You'll find same exact questions in previous year papers. You may download it online.
