The Candidate should be an Indian national.
Passed HSC Science with Physics, and Chemistry as compulsory subjects along with one of the subjects: Mathematics or Biology (Botany and Zoology) from a recognized institution in Maharashtra State or Outside Maharashtra State.

You might want to do Bachelors in Science with Zoology in it. Alternately, nursing and physiotherapy are very good options too if you are keen. There are even options abroad for these disciplines.

2. Bachelors in sciences
3. Bachelors in computer applications
4. Bachelors in business administration, arts, commerce, media and entertainment, etc. Based on your interest and skill set, please pursue the course.

Since you have class 12th Science, you can continue in engineering or medicine; or switch to arts, humanities, commerce, business administration related fields. This depends on your interest and skill set. So, thoroughly analyses your abilities and what your key strengths are, then, decide. All the best.

There are engineering colleges, which offer AI as one of the sub branches alongside computer Science engineering. Example - Jain University offers it. You could explore related options.

No, you cannot do Diploma course from Nirmala Niketan after class 12th, as it have Post Graduation Diploma in Dietetics and Applied Nutrition eligibility criteria are candidate must be a graduate from recognized university.
Admission is based on marks obtained in graduation.
While if you are interested in doing certificate course in food preservation and processing then you are eligible.
