I am happy you have found your interest towards Culinary Arts.
BHM is more theoretical and practical but here emphasis in on core subjects like Food Production, Food Service, Front Office and Housekeeping. But when you are clear that you want only Culinary Arts as your trade, I'd suggest you to focus only on that, because that will give you an overall idea about the course. Moreover, Culinary Arts needs no theoretical knowledge, it needs hands-on experience. So it is more about you learning practically. I suggest you to take up culinary courses, master it and then apply for culinary jobs. It will definitely give you a happy life.
