In view of the recent decision of the Supreme Court of India, it's better to avoid doing engineering graduation via distance education mode. You better think of different field like commerce, finance, fine arts, BCA, microbiology, etc.

No doubt, IIT's are the best but still civil and EEE branch is an excellent option in Anna University-Chennai, DTU-Delhi and BITS-Pilani, College of Engineering-Pune.

Yes, VIT University is a really good choice for EEE. It has a better infrastructure and provides better education.
There are not as many core companies for placements in EEE but you can get a job if you are well versed and able to equip yourself. You may also get a good package as the companies would be mostly reputed.
Since it is a core branch of engineering, I would advise you to do some specializations in M. Tech after B. Tech.
