Hotel management is not just about cooking. There are various sectors in which you can have a career. The examples are food and beverage operations, accommodation operations, front office operations and Culinary operations. If you would like to have Culinary operations then there is no particular thing to cook but you also have to know the basics of cooking the vegetarian and non-vegetarian which can help you throughout your career.
