Yes, you or anyone can still give an exam with a gap after the bachelor's degree programme. But if you clear the TIFR exam then they might ask you for such a long period of gap after the Bachelor's degree programme, ( during the interview ).

1. Get through the syllabus
2. Collect coaching and handwritten notes
3. Complete the syllabus atleast 1 month before the exam
4. Revise the syllabus and make short notes
5. Give mock test , so that you can know how well you have learnt the concepts.
The last month should be utilised only in revision not in new concept learning.

Every candidate has a option to opt for maximum two papers depending upon the shedule. THE papers one chose must be in different shifts. However it is completely optional to choose two paper.
Most of the students chooses only paper.
So yes you can take only Ph.
