It's a very crucial question. On one hand it gives enough time to study in a scientific manner and enhance chances of clearing JEE. On the other hand, monotony may set in which is counterproductive. In perspective of one's life, one year is very insignificant. If you are confident of perseverance at sustained studies you should definitely consider that option if taking break for one year.

Chemistry -
Study organic and inorganic chemistry as much as you can. Physical chemistry questions are easy too but you can do well without them.
Mathematics-
1. Complete calculus. Mostly questions on limits and differential eqns. are very easy. Integration depends on you.
2. Simple but scoring topics such as Binomial Theorem, Probability, Sequences, Limits.
3. Many people feel that coordinate geometry is tough. But believe me, they are very easy.
Physics-
This is one subject where you can study only what are comfortable with.
Mechanics is overrated. Instead concentrate more on the topics which are taught in class 12th. They are a bit easie

Kindly, prepare for JEE as you do not need to attend the class 12th exams. Put your best efforts to prepare for the same. Prepare for your weak topics. Take suggestion from best teachers and use all the online available facilities. Avoid all your fears. Learn all the required formula and short cuts as you know, solving questions for written exams is different.
