Hi,
The parallel courses you can pursue with a Bachelor's of multimedia for better career prospects are:
1 - Graphic designing
2 - Computer aided design
3 - Photography
4 - Animation
5 – Marketing
I would not suggest you to go for any parallel courses with Bachelors of multimedia because one should do a single thing at a time. If you do so you will learn the most out of it, otherwise you will not be able manage any of these properly.

There are various short term, mid term and long term programmes available, no need to stick to a degree of 3 years! Choose a course that suits your skills. You interest is all that matters here.
