Getting a commercial pilot license and getting to learn flying in defense are two entirely different things. There are plenty of flying schools in India and you can choose anyone. Eligibility is to pass class 12th with PCM.
You can join defense forces by appearing for NDA entrance exam conducted by UPSC.

This is a technical course. Students who have passed 10+2 Science stream (with Physics, Chemistry and Mathematics subjects) with minimum 50% aggregate marks are eligible to pursue this course. Diploma holders (with minimum 50% aggregate marks) are also eligible to pursue it.
Note: Minimum marks criteria may vary from one institute to another. Candidate should also be physically and mentally fit.
Admission process:

Yes, you can apply for the work permit but only after you have obtained the license. You can check with the flight training center for career assistance. Getting a job offer already will help you while applying for a job.

Bombay Flying Club, Rajiv Gandhi Academy for Aviation Technology and Indira Gandhi Institute of Aeronautics and Government Aviation Training Institute (GATI) are some of the prestigious institutes in India. You can do it after 12th. Good percentage in 10+2 PCM is mandatory. Doing a B.Sc or not doing a B.Sc does not matter since you must eventually pass the training and licensing exam of the particular country. Instead you can do a B.Sc in aviation management, etc. after your pilot training is over. You can study part time or through distance while working.

Students who have passed 10+2 with science stream from a recognized board with physics, chemistry and mathematics subjects are eligible to pursue this course.
ADMISSION
Reputed institutes follow merit-based admission process. They evaluate candidates merit and performance through entrance test, selection interview, and/or their performance in the board exam.
Deserving candidates, who manage to make it into the merit list, are allotted seats. Some institutes are also known to have seats reserved under quotas like NRI quota and donation quota.

1. You need to first possess a student pilot license. You must be over 17 years of age and have completed 12th in science (Physics and mathematics) with 50%.
2. Your vision in one eye must be perfect. In general medical terminology, it is called 6/6 eyesight. In the other eye, you could have an imperfection of 6/9, which must be correctable to 6/6.
3. General physical fitness is mandatory. You must be free of any disease that can hamper normal function.
4. You need to register at a flying club which is recognised by Directorate General of Civil Aviation (DGCA), Government of India.
