From salary and job opportunity perspective, MBA is better option. You can go for 2 year PGDM course (equivalent to MBA). In PGDM, you study all subjects in 1st year and you have to choose one specialization in 2nd year. So, you have time to think about your field. MBA offers number of opportunities with good packages.

Merely because you are having a Masters in software engineering will not make you eligible to do both UG and PG simultaneously in any university. You will have to do first UG and after completion of it you will be eligible to pursue your PG in psychology. Perhaps if you can check on the website of IGNOU & if they allow you to do post graduation in psychology based on your graduation in engineering then you can do your PG in psychology directly from IGNOU.
