Don't worry, even if you haven't studied or worked in a related field, you can still apply for a master's programme in a different field. But in such a case, you may have to take foundational courses.

No, you don't need to submit your SAT or GMAT score for admission to SNHU. The university has stated on its website that it believes that a student's subject knowledge or potential to grow cannot be judged on the basis of such standardized tests.
