You can try your luck in spot counselling. There the chances are inceeased to get desired college. Plus you can change your college after 1st year if you score well. You can apply to university campus as well

No, you are not eligible as BBA requires students graduated from 12th standard. If you have pursued Diploma after 12th then you can but if you are pursuing diploma after 10th then you cannot study BBA. Instead, you can get a B.E, B.Tech degree

Comparing these two, VIPS (IPU) is a better option. It is the topmost college of GGSIPU. Whereas, Amity is a private university. I'll give first priority to VIPS.

Yes, for admission in B.Ed you need to have Bachelor of Arts (B.A), Bachelor of Science (B.Sc.) or Bachelor of Commerce (B.Com.) from a recognized board/university with at least 50% marks. So you are eligible.
