University Of Melbourne Releases New Cookbook To Empower Australia's Home Cooks

The researchers at the university have released a new cookbook with the aim of empowering Country's home cooks by demystifying the native ingredients and incorporating Indigenous food into their everyday meals.

Associate Professor Dorin Gupta, the University of Melbourne sustainable agricultural scientist and the co-author of the Cookbook said that she hopes that the recipes will include the versatility and ease of cooking with native ingredients.

“Unfortunately, native foods are often showcased as premium ingredients in complicated dishes, often with the price tag to match. This perception needs to shift. While native ingredients might currently be considered high-end and trendy, they should be integrated into everyday meals alongside staples like strawberries, spinach, and wheat. We have an abundance of delicious and nutritious Australian native foods that can, and should, be enjoyed daily in our kitchens," Associate Professor Gupta said.
