Chef Avinash Shares Culinary Secrets with VMSIIHE Students

July 12, 2022: Chef Aviansh Martins of Cavatina, a restaurant located in the picturesque village of Benaulim, paid a visit to the culinary institute and gave the students insights into how a successful career in the culinary world can be made while demonstrating a few of his signature recipes. The culinary institute is one of the top hotel management colleges in India.

He finally made the decision to enter the culinary industry after much reflection. After graduating from culinary school in Ooty and completing his post-graduate studies in Delhi, he worked all throughout India for the renowned Oberoi Hotels before moving abroad.

Food prepared by Chef Avinash is locally and artisanally sourced. He discussed the significance of having a zero carbon footprint and how students are the food industry's future brand ambassadors.

Two recipes were presented by Chef Martins, one of which was a cool salad with fresh vegetables and a citrus dressing, perfect for the summer heat. The other was a fillet of sea perch (Chonak), which he marinated in rechard verde for a Goan-influenced continental seafood meal. The fish was then cooked while still enclosed in its banana wrapper. Then it was served with velvety caldin sauce and roasted pumpkin mash.

The students discovered that Goan cuisine may be combined in a variety of ways while utilising various methods to produce some distinctive dishes.

The students learned numerous insider secrets from Chef Avinash during the event, which they considered to be very educational and useful. "Cooking is a creative endeavour, and for the finest results, one should always use fresh ingredients. Chef Avinash continues, "The cuisine created with love is the tastiest food.

There are no fast cuts to success; you must put in a lot of effort because it takes time, Chef Avinash told the children. Don't lose heart; be patient with yourself and take care of yourself. Great chefs don't just appear out of thin air; it takes years of hard work, perseverance, and long hours. You should have confidence in yourself and not be discouraged by what other people think.

The VM Salgaocar International Institute of Hospitality Management students enjoyed and learned a lot from Chef Avinash's workshop. It was interactive, lots of learning and the students brought home numerous tips.

Your first step towards a successful hospitality career.

Placements: At VMSIIHE, all students are required to do a compulsory 6-month internship in India or abroad. Most students get placed in top hotels around the world for this internship. In the final year, hotel brands like Taj, Hilton, and Marriott visit the campus for on-campus recruitment for openings such as management training programs, supervisor training, and entry-level positions.

Infrastructure was really good. Various courses were introduced to increase our skills.

Placements: Around 60% found a place in the form of management programmes. The top recruiting companies were Oberoi, Taj, and several others, including the international ones with Marriott, etc. The main four departments that our course trained us in were beverage service, food production, front office, housekeeping, etc.

The college has well-equipped modern tools and facilities.

Placements: Our college has tied up with several properties, both national and international. During the second year, you get the opportunity to have your internship abroad or in India. The course teaches you the ways of a hotelier and how to think like a manager of a company.

It is an excellent college in Goa with good-quality products to work with.

Placements: Top roles offered are management trainee, head of the department, and first cook. The college has tie-ups with different hotels and brands, and it also has tie-ups with the tourism industry in Portugal, which helps us apply for internships and learn about different cuisines.

VMSIIHE State of the Art Institute

Placements: Hilton, Marriott, Taj, and many more offer HMT training. The initial package in the hospitality industry isn't great, but the highest package was INR 30k per month for HMT. All the students had the opportunity to go on an international internship. Portugal is the most preferred place to intern.

It is the best institute, with international standards and facilities.

Placements: As the third year started, companies started recruiting students from our college. The top hotels like Oberois, Taj, Accor, and Marriott came to our institute. The top roles offered to us are HOT and MT programs by the hotels. Internships started after we completed the first year. Internships are compulsory. We have all been sent to Portugal and Dubai to experience the work culture of our industry.
